Baltic cuisine
This part of our menu celebrates local specialities. We add Baltic herring to the classic dressed-herring salad and spicy sprats to vinaigrette. We also recommend Baltic eel, baked pike-perch and pike klops.
The complex's main historic building houses an inviting restaurant inspired by the traditions of the Russian nobility.
The spacious open terrace offers picturesque views
of the surrounding park and apple orchard.
The main historic building of the Usadba country complex houses an inviting restaurant with an authentically Russian, noble character.
Antique sideboards, lace and floral tablecloths, a welcoming fireplace
and a summer terrace framed by climbing roses recreate the atmosphere of an 18th-century estate.
Our culinary concept brings together Russian and Baltic dishes, prepared from historic noble recipes with signature touches and local ingredients.

Throughout the year, we cook over an open fire: dry-aged steaks, ribeye, filet mignon, succulent Baltic eel skewers, grilled salmon, homemade sausages and more. Our steak meat is matured in specialised ageing chambers.
We love potatoes, one of the great stars of Russian cuisine. More than a side dish, they are a source of culinary inspiration. We turn them into golden potato pancakes, delicate filled dumplings, fragrant fried potatoes with onions and seasonal mushrooms. We bake them, whip them into light mash and add them to salads, soups and main courses: a tribute to the potato, humble and endlessly versatile.
For adventurous gourmets, we have created the Horns and Hooves section of our menu. It pays tribute to traditional recipes in which every cut of offal is a delicacy. Bull's testicles, homemade blood sausage, kidneys in sherry and veal brains in a cream sauce are dishes for those seeking new flavours.

From 15 March, the restaurant offers a special menu dedicated to Baltic smelt, with traditional dishes and the chef's signature interpretations.
Throughout the week, guests can try our signature homemade herbal and berry teas at a special price.
This year brings sea buckthorn desserts, pumpkin cream soup and signature warming drinks.
